Ungrafted Syros Island Serifiotiko grapes give this wine a distinctive aromas of citrus fruit, well integrated alcohol and a dry refreshing aftertaste of Cycladic island minerality, which comes from its immediate proximity to the Aegean Sea.

“Ungrafted vines grown on Syros. 35- to 80-year-old bush vines, dry farmed on terraces carved into the mountains. Chilled for 24 hours, whole-bunch pressed. Fermented over 21 days in tank. pH 3.43, RS 3.05 g/l. Pale lemon colour and an intense aroma of dusty, stony but clean-cut citrus. Lemon and grapefruit, as well as pear. Smells pithy. Tastes wonderfully smoky and bone dry even though there is a little touch of residual sugar – only just above the perception threshold. Sour citrus flavours have both clarity and complexity, remarkably so for an unoaked wine. Mouth-watering and slightly chewy. Real depth and interest”.
A brilliant, crystal-clear, pale yellow coloured wine. Very generous on the nose with dominating aromas of water melon grapefruit, peach and citrus fruit accompanied by floral notes of jasmine and honey. Serves best with Pasta, lobster, grilled sea bream , chicken dishes with sweet and sour sauces, yellow cheese or fruits.
WhiteThalassitis Submerged 2015 is a PDO Santorini 100% Assyrtiko Gaia Wines each year since 2009 “sinks” about 500 bottles of the current vintage of “Thalassitis”, just off the East Coast of Santorini. Down there, in ideal wine aging conditions of stable temperature and no light, they leave them to age unaffected by oxygen. Today at 20 meters depth, an underwater cellar is forming, which at any given moment comprises of four consecutive vintages of Thalassitis. The acidity has softened astonishingly, giving the impression of an evolved wine. The colour misguidedly suggests youth, yet all signs of oxidation are absent. Rosé
A charming Rosé made from Cycladic Fokiano grapes. Intense fresh summer fruits on the nose, sweet mature fruits in the mouth and a delicate unique aftertaste.

“Exceedingly fruity on the nose. I'm not sure it smells definitively Greek but the chewiness and juiciness on the palate is not something I've come across elsewhere. Massive fun. Should instantly transport you to a taverna with superlative tarama and dolmades. In fact, why aren't we having one of those tonight? Real undertow and character. Not a vapid rosé but one that should live on for quite a while. Love that light astringency and florid fruit. But it doesn't taste bone dry (low acid rather than residual sugar perhaps?) so be prepared. Long.

Red
Agiorgitiko: Gimno in Nemea at a 2,132 ft (700 m) altitudeCabernet Sauvignon: Corinthia at a 2,132 ft (700 m) altitude
The colour is deep purple with some terracotta hues. On the nose it is mature, concentrated, dense, and with immense complexity. Aromas are focused on ripe red fruits (morello cherries, blackberries and cherries) along with spicy characteristics such as clove, cinnamon and black pepper, with hints of herbal aromas and cedar.
100% Syrah Sulphites Free Vinification A PGI Attiki red dry organic wine The Wine has a superb deep red colour with violet tints, a fresh aromatic character that is reminiscent of raspberries and strawberries. Serves best with Red meat dishes, pasta with basil pesto and proscuitto, as well as yellow hard cheeses such as Gruyère.
A PGI Nemea 100 % AGIORGITIKO red organic wine Ruby Red colour with aromas of smoke, vanilla and oak on the nose. Full bodied with soft tannins that end in a long finish.
